A psychology professor at the University of Oxford explains the impact of music on our palate


It is a scientific fact that the sound, which includes music, has an impact on our palate. Charles Spence, a professor of psychology at the University of Oxford, published a thesis in 2004 which showed that the noise caused by chewing a crisp can influence our perception of the taste of it; in other words, the more crisp sound, tastier us will appear.


The same Charles Spence participated in a recent podcast which explored the connections between sound and food - which you can hear here - and proposed an experiment; taste a cup of coffee while listening to two different sounds.
According to Spence, first one must try the coffee and memorize every nuance of taste. Then, depending on the sound heard, a new draft will produce different sensations; coffee seem more bitter with the first sound, and sweeter with the second. This is because the brain can not process so much information at once; soon, will call our attention to a particular flavor.
